BAKING/CUISINE (CHINESE)

CAKE DECORATING
All levels will learn professional techniques and skills involved in producing beautiful decorations on holiday, specialty and all occasion cakes for family and friends. Excellent preparation for an entry level position in cake decorating or for freelance cake design. Class is multi-level. (Materials are extra.)
Level 1: Students will learn the fundamentals of cake decorating: baking, filling and frosting. Emphasis will be on icing cakes, pressure piping, writing, icing flowers, and the use of colors in decorating.
Level 2: Continuing students in the first trimester will make fall flowers, focus on colors, side designs, new borders and work with rolled fondant. Students in the second trimester will learn to work with royal icing and make Panoramic sugar eggs.
Level 3 to Advanced: Continuing students in the first trimester will work on creativity, designing and gum paste flowers. Students in the second trimester will work with royal icing pieces, lace work, and hand modeling figures, and Topsy Turvy cake. Third semester will focus on decorating fancy cupcakes, pipe figures, sculpture a purse cake, painting on cakes and continue with gum paste flowers.

FOOD PREPARATION
Students will bring their own equipment to each class. Supply list available once classes are approved.

DECORATED PIE SHELLS
Students will learn how to make the perfect pie dough and will choose from over 6 different decorated shells to make. Students may bring up to 6 pie tins, but will only bake one pie in class (pumpkin). All other shells will be taken home to freeze for future pies. ($1 material fee paid to the instructor on day of class.)
